EGGPLANT: a fruit-vegetable which is growing in popularity in this country. In many parts of the tropics it is a staple and important article of diet. There are several varieties of the plant, yielding fruit of varying qualities and of different colors, shapes and sizes. The best known type is somewhat eggshaped, three to five inches in diameter and from light purple to black in color. It is generally fried in slices, but is even more palatable when cut in one-inch cubes. It is also excellent stewed.
