MARRONS: a variety of chestnut extensively cultivated in France and Italy. They are best known here in preserved form, either bottled in brandy or syrup or "iced" dry (in the latter case being known as Marrons Glaces) and are used in the making of various frozen and other fancy desserts, in fruit salads, etc. Syrup Marrons are readily transformed into Marrons Glaces by exposing to the atmosphere for a few hours to allow the syrup to crystallize on them.
